For this week, I focused on meals that created ease: ease in my schedule, and ease in the nourishment it's providing my body.
As the Holiday nears, I know I'll be spending quite a bit of time in my happy place {aka kitchen} and to avoid burnout, I wanted easy meals this week with many of the ingredients I already have stored away in my pantry and fridge.
And to be honest - I'm still getting used to cooking for just myself, or the kids when they're here, so my portions have been far larger leading to quite a bit of leftovers being tossed *insert crying emoji here*
But that's where creativity can flourish, putting together fun plates or bowls, using the food you've already prepared.
Enough chit chat. Again, don't get too excited; it's real simple this week. But here's what I'm whipping up this week -
Sunday: leftovers
SO many leftovers from this past week. Tonight's plate will be random, but still nourishing and delicious.
Monday: ham + cheese sammy's
Whenever it's a transition day with my kids, I try to have one of their favorite food options for that night to create predictability and ease in their own nervous system. My kids love a classic ham and cheese sandwich, toasted, with a few swipes of organic mayonnaise and my son's favorite potato chips on the side. Then, I'll add some of their favorite fruit and spoonful of 4% cottage cheese for some additional protein. For bread, I slice and store my homemade organic sourdough in the freezer to easily pull out a few pieces, thaw, and lather the bread with grass-fed butter before pan toasting. It taste just as fresh with all the benefits that come with sourdough bread.
Tuesday: crockpot steak + peppers
This is a recipe I've been dying to try {recommended by my sister} and many of the required ingredients are probably already hiding in your pantry. Nothing leaves me feeling more nourished than grass-fed beef, vegetables, and rice.
Wednesday: leftovers
Thursday: baked chicken
Simplicity here. I've cooked a lot of chicken over my years of being in the kitchen that my chicken breast never come out dry.
Here's my tried-and-true method:
⊹ organic, pasture-raised chicken breast
⊹ seasoning of choice
⊹ cast iron skillet
preheat oven to 400
𓂂 heat cast iron skillet to medium heat
𓂂 place chicken on cutting board and dry off moisture w/ paper towel
𓂂 use meat tenderizer and pound chicken until even height w/ all breast
𓂂 drizzle evoo over chicken and season chicken on both sides
𓂂 drop a generous slab on butter in heated skillet and place chicken in skillet, cooking for 3-4 minutes or until nicely browned. flip and repeat on opposite side
𓂂 transfer skillet directly into preheated oven and bake for 15-18 mins., or until internal temp reaches 165
𓂂 remove skillet & allow chicken to rest for a few minutes before slicing
Pair the chicken with a delicious baked Japanese sweet potato (bake @ 425 for 1hr.), topped with butter and cinnamon, & some steamed veggies for a very nutritious meal!
Friday: out to eat
Intentionally scheduling in my weekly out to eat meal to allow someone else to nourish my body, rooted in zero self-shame or self-critique with whatever I decide order. I'd say 90% of my diet is extremely clean and never feels restrictive because this is when I feel the best. The other 10% is allowing myself to eat a burger with tater tots from a local restaurant because damn, that also tastes delish.

Saturday: chili w/ baked potatoes
Mmmm, there is nothing better than a pipping hot ceramic pot of homemade chili simmering on the stove on a cold, winter evening. And this combo is comforting, yet hearty, and allows for creativity whether you eat the two separate, or go open face style with your baked potato, loading that baby up with chili and all the fixings.
My chili recipe is one I've refined over the years to perfection and I've been told {no really, I have} that it's the best chili - ever. Here's the recipe:
⊹ 1 sweet onion, diced
⊹ 3 cloves garlic, minced
⊹ 1lb. grass-fed ground beef
⊹ brisket bacon {any will do}
⊹ 2C. beef bone broth
⊹ 2T chili powder
⊹ 1t. oregano
⊹ 1/2t. smoked paprika
⊹ 1/2t. paprika
⊹ 1/2t. black pepper
⊹ pinch of nutmeg
⊹ 1 1/2t. salt {or to taste/preference}
⊹ 1t. coconut sugar {or to taste/preference}
⊹ 14oz. can fire roasted tomatoes
⊹ 8oz. tomato sauce
⊹ 2 cans chili beans
𓂂 heat ceramic pot over medium heat and cook bacon until desired crispiness. remove bacon onto paper towel lined plate and pour out grease, leaving behind a tablespoon or two
𓂂 add onions and sauté until tender
𓂂 add minced garlic until fragrant
𓂂 add ground beef & brown
𓂂 add seasonings
𓂂 chop a few slices of bacon and add to pot along with remaining ingredients & bring to a boil then let simmer for 20-30 mins.
The perfect baked potato:
𓂂 preheat oven to 425. wash and poke many holes. lather outside of potato with evoo and sprinkle salt. place onto parchment paper lined cookie sheet and bake for 1 hr., or until soft inside
Top chili w/ sour cream, shredded cheddar cheese, cayenne pepper, & drizzle of hot honey!

𓂂 8oz. tomato sauce
𓂂 tamari, low sodium, or coconut amino's
𓂂 (2) cans chili beans
𓂂 beef bone broth
𓂂 chili powder
𓂂 smoked paprika
𓂂 paprika
𓂂 oregano
𓂂 jasmine rice
