This Week's Table | 12.28.25

How are we welcoming another New Year already? Does anyone else feel 2025 whizzed on by, in the blink of an eye?


As much as I love the food traditions that arrive with the holiday’s, my body is craving the mixture of simplicity, comfort, and nutrient dense options.


For this week, I incorporated quite a bit of chicken because it’s a great source of lean protein and light on the digestive system. As always, swap for your preferred protein sources!


And I apologize for this menu being short and sweet. I am headed off to Great Wolf Lodge with my entire family next Friday to be a kid again, with my kids, and obviously won't be home to cook :)

But if you're in need of some inspiration, please reach out and I'll share some of my other favorite recipes I wish I could've squeezed into this week's menu.


I'm nursing yet another cold (hello activated immune system from body building prep), but thankfully it's not anything I can't handle. So, I thought a simmering pot of homemade chicken broth mixed with veggies and rice sounded like the perfect meal to kick this crud.


With the soup, I'll enjoy a slice of frozen homemade sourdough and side homemade caesar dressing salad for additional nutrient dense support.


Monday: homemade pizza

I have my kiddo's this evening and in need of something easy, yet an option they'll enjoy - who doesn't love homemade pizza?

And let me tell you, purchasing and using these baking stones off Amazon was a GAME CHANGER in my pizza crust quality. Fluffy, chewy, and just enough crispiness.


For toppings, I'm planning on plain jane tomato sauce and freshly shredded mozzarella.

Sadly, I cannot share my sauce recipe (I was sworn to secrecy), but here's my dough recipe that's been refined and perfected over the years

My Pizza Dough Recipe

300g flour

200g water

1t. yeast

1t. sugar

1t. salt

1T. evoo

𓂂 warm water below 110 degrees and sprinkle sugar and water. let rest for 5-10 minutes until yeast blooms

𓂂 add remaining ingredients into mixer bowl, using dough hook, mix on speed 2 for 6ish minutes

𓂂 cover & let rise until doubled

𓂂 once ready to use dough, stretch and roll into desired pizza shape. add toppings and bake at 450 for 15ish minutes


You can use rotisserie chicken here, but I love cooking a few chicken boobs on low in the crockpot all day because it makes theeee best shredded chicken. Just drizzle some evoo to the bottom of the crock with some water, chicken boobs, and season with salt and pepper and let cook for 6-8 hrs. on low depending on how much chicken you're preparing

But this chicken tinga recipe is to die for; I could easily eat this meal every week.

I'm dishing the chicken tinga over sautéed cauliflower rice, roasted bell peppers, and avocado - yum!


For NYE, I love a good app night and this is one of my favorites. It's comforting, cozy, hearty, and so flavorful! Serve over rice in a bowl, or grab a bag of tortilla chips!
